If you are anything like me, you probably think Xmas leftovers are pretty much the best thing ever…because it’s free obviously and also means I don’t have to cook!  I mean, I love cooking, but not 3 times a day..every day, for ever-so-slightly-ungrateful kids.  Actually my eldest is awesome and loves trying out new things but she is over Xmas Ham.  In a major way!  So we dreamed up this salad concoction together and it was a big hit, yay!  Even my baby thought it was pretty fab:

Ingredients
  1. slices of ham off the bone, cut into chunks
  2. sauteed leftover potatoes
  3. 2 ciabatta rolls
  4. olive oil
  5. seasoning
  6. 2 cloves garlic, crushed
  7. 1/2 teaspoon black chia seeds
  8. 1/2 cup cooked buckwheat
  9. cucumber chunks
  10. celery slices
  11. fresh baby carrots, peeled and quartered lengthways
  12. capsicum slices
  13. handful fresh peas, podded
  14. handful fresh raspberries
  15. bunch washed Cos lettuce
For the dressing
  1. 100ml olive oil
  2. 50ml vinegar of your choice (I used Balsamic but usually use a nice white wine vinegar)
  3. 1 teaspoon Dijon mustard
  4. 1/2 teaspoon honey (I use J. Friend & Co NZ Artisan Honey)
  5. sea salt and pepper to taste
  6. handful fresh Italian Parsley
  7. small handful fresh basil
Instructions
  1. Turn the bread rolls into large croutons by chopping roughly and adding the oil, garlic and seasoning. Bake at 180 degrees until golden brown. In the meantime, chop all the salad ingredients and prepare the dressing by putting all the ingredients in a tall container and blitzing with a stick blender (or use a food processor) until the herbs are completely chopped and its a very green, thick consistency. Either mix all the ingredients together with the dressing or assemble the salad nicely and put a dollop of dressing on the top.
Notes
  1. Can be gluten free by omitting the bread rolls or substituting for gluten free bread.
