Lemon Chicken Salad with Basil Dressing

This Lemon Chicken Salad with Basil Dressing was basically a throwing together of a bunch of yummy
goodies I was given by Just Organic to review…everything was so fresh and amazing, I didn’t want to do too much to it!  I was also given some mung beans which I sprouted with my 4 year old daughter…this is a really fun activity for preschoolers and we didn’t need to wait too long!  They were ready to eat in 3 days 🙂

Lemon Chicken Salad with Basil Dressing

Salad Ingredients:

*pear roasted with honey

*avocado

*mesclun salad leaves

*sprouted mung beans

*roast pumpkin and sweet potato

*fresh carrot strips

*thinly sliced raw cabbage

*roast beetroot

*orange slices

*microgreens for the garnish on top (completely optional but we grow them)

*lemon and garlic chicken (recipe below)

*basil dressing (recipe below)

Ingredients
  1. 2 handfuls fresh basil leaves
  2. 2 handfuls fresh parsley (I use Italian Parsley but any is fine)
  3. 3/4 cup oil (I use olive)
  4. 2 teaspoons dijon mustard
  5. 1/4 cup white vinegar (I used tarragon vinegar): more if you like your dressing sour
  6. salt and pepper to taste
  7. 1 teaspoon brown sugar or honey if you prefer
Instructions
  1. Place the herbs in a food processor or blitzer. Blend for a few minutes. Add the mustard and half the vinegar and blend until nearly a puree, and leaves are very finely chopped. The mixture should be very green. Add the remaining ingredients and season to taste.
  2. This will keep for a week in the refrigerator 🙂

Ingredients
  1. 3 chicken thighs
  2. 2 lemons, zest and juice
  3. 3 T oil
  4. handful chopped parsley
  5. 4 large garlic cloves
  6. salt and pepper, to taste
Instructions
  1. Place all the ingredients together in a bowl and mix to combine. Marinate for 1-2 hours. Sear in a hot pan with a small amount of oil until both sides of the chicken are golden brown, then transfer to an oven proof dish. Bake at 180 degrees Celsius until just cooked through. Rest for 10 minutes then slice into thick strips.
