Gluten Free Cornflake Crusted Chicken

This Gluten Free Cornflake Crusted Chicken is super crunchy and is also dairy free, egg free, and nut free.  I used Hubbards gluten free cornflakes, but anything crunchy will do!  I served it with steamed rice, veges and a spicy soy sauce (granted, the sauce wasn’t a huge hit with the kids haha but I really enjoyed it!)

Ingredients
  1. 3 chicken breasts, each cut in half lengthwise
  2. 3/4 cup gluten free flour (I used a mix of cassava, banana and rice flour)
  3. 1/2 cup egg replacer (I used NoEgg)
  4. 3/4 cup rice crumbs
  5. 1 cup crushed gluten free cornflakes (I used Hubbards GF cornflakes)
  6. salt and pepper
  7. 1 teaspoon Moroccan spice mix
Sauce
  1. 1/4 cup soy sauce
  2. 2 teaspoons honey
  3. 1/4 teaspoon chilli flakes
  4. 2 teaspoons chopped spring onions
Instructions
  1. 1. Place the flour in a bowl and season well with salt, pepper and the spice mix.
  2. 2. Mix the cornflakes and rice crumbs in a separate bowl.
  3. 3. Pat the chicken pieces dry with a paper towel.
  4. 4. Coat all the chicken pieces by dipping in the flour mix, then the egg replacer, then the crumb mix.
  5. 5. Place on an oven tray lined with baking paper.
  6. 6. Drizzle some olive oil (or any oil) over the top then bake at 190 degrees until golden brown and cooked through.
  7. While chicken is cooking prepare the sauce by melting the honey then adding the remaining ingredients.
  8. Serve with steamed rice and vegetables.
