Gluten, Dairy and Egg Free Chicken Tacos with Pear Salsa

I was lucky enough to get some dairy free cheddar cheese from Angel Food last week and we’ve been trying it in all sorts of places I’ve been missing cheese, like Baked Potatoes, Pizza and Tacos.  It works pretty much like regular cheese, the only difference really was I found I needed to heat it a bit higher/or for longer to melt it.  No big deal at all.

All of my three girls are allergic to tomato which is really frustrating at times and generally rules out salsa.  Two of them are also allergic to apples so I used pear in this salsa, you could really use any fruit though.  We used gluten free taco shells made from corn as Miss 4 is just growing out of her corn allergy (not that she ate any anyway!) but any tortillas/taco shells will do if you can tolerate wheat.

Spice mix
  1. 1/4 teaspoon chilli powder
  2. 1/4 teaspoon garlic powder (check it's gluten free)
  3. 1/4 teaspoon onion powder (check it's gluten free)
  4. 1/4 teaspoon dried oregano
  5. 1/4 teaspoon paprika
  6. 1/4 teaspoon ground cumin
  7. 1 teaspoon salt
  8. 1/4 teaspoon black pepper
Salsa
  1. 1/2 red onion, finely diced
  2. 2 ripe pears, diced
  3. 1 Tablespoon chopped fresh coriander
  4. 1/2 cup diced fresh pineapple
  5. 1 teaspoon brown sugar
  6. salt and pepper to season
Other ingredients
  1. 6 chicken thighs or two large breasts
  2. 2 avocados
  3. 1 cup grated dairy free cheese, I used Angel Foods cheddar (you can leave this out if you can't source any df cheese)
Instructions
  1. 1. Mix the spice ingredients together
  2. 2. Slice the chicken into strips and toss with the spice mix
  3. 3. Mix all the salsa ingredients together and set aside
  4. 4. Heat a frying pan and fry the chicken with some oil until just cooked through
  5. 5. Heat the taco shells/tortillas.
  6. 6. Place a spoonful of avocado in each shell, put the chicken on top then cover with the grated cheese. Top with the salsa.
