Dairy Free Chocolate Truffles

We always give baking to friends, family and teachers to say thanks for their support and kindness during the year..and truffles are nearly always a feature.  All our baking is egg, dairy and nut free with some gluten free ones as well; nobody has ever complained about the taste: in fact, I expect most haven’t even noticed!  We also usually make up a big bowl of this truffle mixture then melt a little bit to dip fruit in for a special dessert treat with all the yummy Summer fruit we are enjoying right now.  You can really add whatever you like to this truffle mixture but I’ve just added our suggestions with the recipe.

Ingredients
  1. 250g chopped dark chocolate (I use Whittakers 72%)
  2. 250g milk or cream substitute (I use Alpro soy cream)
  3. 1 Tablespoon softened dairy free margarine
Flavourings
  1. crushed Oreo cookies and dried cranberries
  2. raisins soaked in rum or coffee
  3. freeze dried raspberry powder (I put it in the mix and then roll in it as well)
  4. crushed gluten free Weetbix, coconut and raisins
  5. crushed candy canes
  6. 250g melted dipping chocolate (I use Whittakers but it needs to be tempered for dipping..otherwise use a compound or cooking chocolate)
Instructions
  1. 1. Bring the cream to the boil and pour over the chopped chocolate.
  2. 2. Place some cling film over the top and leave to sit without stirring for 5 minutes.
  3. 3. Remove the film then whisk in the margarine until mix is completely blended with no lumps of chocolate. Add whatever flavourings you want.
  4. 4. Refrigerate until just set.
  5. 5. Roll into balls and place on baking paper. Return to the refrigerator until ready to dip.
  6. 6. Dip in melted chocolate and roll into toppings such as shaved chocolate, crushed candy canes, coconut or freeze dried fruit powder.
