Dairy free chocolate reindeer
Dairy free chocolate reindeer
These Dairy free chocolate reindeer are based on some images of something similar that has been doing the rounds on Facebook..I’ve just tried to switch a few things around to make it work for our family…hopefully it works for yours too 🙂 This version is dairy, egg and nut free…if you used something instead of the pretzels for antlers, it would be gluten free as well. I’ll be honest and say they are slightly drunk-looking reindeer but my Miss 10 made most of these and it was a bit of a last minute thing…but we had lots of fun doing it and they taste great.

- 2 cups sugar
- 1 cup water
- 1/2 cup water for the gelatin
- 2 Tablespoons gelatin
- splash peppermint essence
- 1. Place the gelatine and 1/2 cup water in a bowl and mix quickly.
- 2. Put the 1 cup water and sugar in a large pot and bring to the boil, whisking to dissolve the sugar.
- 3. Add the softened gelatine and whisk until gelatine has dissolved in the sugar mix. Boil steadily for exactly 15 minutes.
- 4. Take off the heat and let cool for a few minutes.
- 5. Place into a cake mixer bowl then add the whisk attachment. Whisk over low speed until beginning to cool, (about 5 minutes), then turn up to high speed.
- 6. Add the peppermint essence and whisk until white and very thick (you want to catch it just before it sets, it should be thick enough to hold its shape when you pipe it).
*free from biscuits (we used peppermint ones)
*2 pretzel bows for each biscuit (or gf alternative)
*one pack of dairy free chocolate buttons
*chickpea brine and icing sugar for the icing
*baby white marshmallows (gf if necessary)
*one measure of marshmallow from recipe above
1. Line up ‘free from’ biscuits on a tray
3. Coat in melted dairy free chocolate
4. Make eyes by slicing white baby marshmallows and piping chocolate on
5. Make nose by piping red aquafaba icing (just 1 tsp chickpea brine with icing sugar whisked in until stiff) on to dairy free chocolate buttons
To finish, slide pretzel bows underneath the coated marshmallow and biscuit. Add the nose and eyes.
