Dairy and Egg Free Banana Cake
This Dairy and Egg Free Banana Cake is super easy to put together…we did it in about 5-10 minutes and it doesn’t need a cake mixer (although you can use one if you want). It’s a nice soft cake, tasty with or without icing. We had some with chocolate buttercream but the rest with just a sprinkle of icing sugar. If you want to make it a bit fancier, you can cut in through the middle and fill with whipped coconut cream and bananas, then top with chocolate icing.


- 3/4 cup chickpea brine
- 3/4 cup white sugar
- 1/2 cup oil
- 2 ripe bananas
- 1 teaspoon baking soda
- 2T dairy free milk substitute
- 2 cups plain flour
- 1/8 teaspoon salt
- 1 teaspoon baking powder
- 1. Place the chickpea brine and sugar in a mixing bowl and whisk well for 2-3 minutes.
- 2. Add the oil gradually while whisking quickly.
- 3. Mash the bananas and add to the mixture.
- 4. Heat the milk and add the baking soda.
- 5. Add the flour, baking powder, salt and milk mix and mix together until just combined (don't over mix).
- Place in a lined baking tin and bake at 170 degrees Celsius until just cooked through (mine took about 20 minutes).
