Dairy and Egg Free Banana Cake

This Dairy and Egg Free Banana Cake is super easy to put together…we did it in about 5-10 minutes and it doesn’t need a cake mixer (although you can use one if you want).  It’s a nice soft cake, tasty with or without icing.  We had some with chocolate buttercream but the rest with just a sprinkle of icing sugar. If you want to make it a bit fancier, you can cut in through the middle and fill with whipped coconut cream and bananas, then top with chocolate icing.

Ingredients
  1. 3/4 cup chickpea brine
  2. 3/4 cup white sugar
  3. 1/2 cup oil
  4. 2 ripe bananas
  5. 1 teaspoon baking soda
  6. 2T dairy free milk substitute
  7. 2 cups plain flour
  8. 1/8 teaspoon salt
  9. 1 teaspoon baking powder
Instructions
  1. 1. Place the chickpea brine and sugar in a mixing bowl and whisk well for 2-3 minutes.
  2. 2. Add the oil gradually while whisking quickly.
  3. 3. Mash the bananas and add to the mixture.
  4. 4. Heat the milk and add the baking soda.
  5. 5. Add the flour, baking powder, salt and milk mix and mix together until just combined (don't over mix).
  6. Place in a lined baking tin and bake at 170 degrees Celsius until just cooked through (mine took about 20 minutes).
