Ingredients
  1. 200g dairy free margarine
  2. 100g icing sugar
  3. 1/4 teaspoon ground cinnamon
  4. 1/2 teaspoon vanilla extract
  5. 360g standard grade flour
  6. raspberry jam
  7. icing sugar for dusting
Instructions
  1. Cream the margarine, icing sugar and vanilla until fluffy (I do this in a cake mixer but you can do it by hand if you are keen). Add the flour and cinnamon all at once and mix briefly until flour is just incorporated. It will lose its melt in the mouth feel if you over mix it at all so be careful here! Wrap in cling film and refrigerate for at least 1 hour.
  2. Sprinkle the bench top with some flour then roll out half the mix to about 6mm thickness. Cut into circles with a fluted ring (or any other shape you want actually) and place on a baking tray. Roll out the remaining mix to the same thickness and cut out with the same ring. Next cut out a small circle from each of the second batch. I used the top of a piping nozzle but anything small will do. Brush a small amount of milk or water on the first set of circles then carefully lay the tops with circles cut out on the top so they line up evenly. Place in a 175 degree oven until lightly browned: about 10 minutes usually. Add a small dollop of jam into the centres while the biscuits are still hot. Sprinkle with icing sugar when cool 🙂
