Chocolate brownie all grown up.
This quite fantastic chocolate brownie recipe is one of those ones which will have people completely confused about why they bother eating egg and dairy! And if you have apple allergy like we do in our house, just substitute pear. Nut allergy? No problem, leave them out..it is still fantastic!
250g dairyfree margarine (I use Sunrise)
300g sugar
250g pureed apple
100g flour
200g chocolate for melting (I use Whittakers 74% chocolate because I love my chocolate bitter)
100g chopped chocolate
vanilla (I use Heilala vanilla paste)
1/2 tsp baking powder
large pinch sea salt
handful chopped pistachios if using (or any other nuts)
packet dried cranberries (I save some to decorate the top)
For the frosting:
150 g melted chocolate
100g dairyfree margarine
200g icing sugar
Place the margarine, sugar and vanilla paste in a mixing bowl and mix well for about 3 minutes (I just do this by hand but you can do it in a cake mixer).
Melt the chocolate: I do this in the microwave in 20 seconds spurts, stirring each time. I take it out before it is completely melted as it will finish melting as it sits. It should look like this when you take it out >.
This will stop it burning. You can thank me in chocolate!
Add all the melted chocolate in one go and whisk quickly so it doesn’t set. It should look like the picture on the left with no hard pieces of chocolate in….
Add the apple sauce and stir thoroughly. Then add the rest of the ingredients, place in a lined dish and bake at 175 degrees until firm but still very soft. Mine took about 30 minutes.
When cool, make the frosting: Melt chocolate and margarine together then whisk in the icing sugar. This may look a bit odd at this stage, but just add 1/4 cup hot water and then whisk for a further two minutes. It should all come together and look very yummy and chocolatey! Spread over the brownie and add cranberries and chopped nuts to the top if using 🙂
